Whew! All the gifts have been purchased and wrapped. What a relief. Now it is finally time for the baking to begin. Each Christmas it is a tradition for the family to make gingerbread boys together.
This year I also made red velvet cookies and boy are they yummy!
After making the cookies I decided to dip some of them in melted white chocolate chips and sprinkled nuts on a few. In my opinion, you can never have too much white chocolate!
After an exhausting but fun day of baking cookies, we ended up with this assortment.
If you would like to try the red velvet cookies, here is the recipe.
Red Velvet Cake Cookies
1 box red velvet cake mix (we prefer Duncan Hines)
1 egg plus 1 egg white
1 stick butter melted
1/2 bag white chocolate chips
1/4 cup sugar (optional)
1 bag white chocolate chips if you want to dip the cookies (optional)
Finely chopped pecans or pistachios (optional)
Mix the cake mix, eggs, butter, 1/2 bag white chocolate chips and 1/4 cup sugar with a spoon and then spoon about 1 teaspoonful onto an ungreased cookie sheet or parchment paper. Bake 8 minutes at 350 degrees or until right before the edges start to brown. Makes about 36 cookies.
If desired, dip half of cooled cookie into 1 bag melted white chocolate chips and sprinkle with pecans or pistachios. Let stand on waxed paper until set.
